Air China isn’t the only airline to allow open-jaw (into one city, out of another) itineraries. Other airlines including Korean Air also allows the same itinerary but their price is different.
If you want to choose your own dates, click on a flight link and choose your own dates. however, before searching randomly, I suggest checking out this page which has Air China flight schedules between Australia and Europe so you can know what days they fly to what cities.
